Baking brownies is something of an occupational therapy for me.
I love that it combines both art and science, with my best recipes calibrated as much with creativity as with steadfast precision. I learn something new with each batch. Melting the butter with the chocolate and beating in the sugar and eggs manifests in brownies distinctly different from those baked by first vigorously beating the eggs and sugar (until they’ve almost tripled in volume) and then folding in the melted chocolate and butter. Both are equally delicious of course, but also deliciously different.
Of course, the best thing about brownies is that they speak the language you need depending on your mood, the occasion or the need of the hour. Their devilish decadence is a treat you ought not to miss at any celebration big or small; while the craveable chocolatey-ness is perfect when you need some edible comfort.
Everyone needs a go-to homemade brownie. Here are my favourite recipes featuring everything from unabashedly indulgent mudslide brownies to brownies swirled with salted caramel. Yes, there are eggless recipes in the mix (including Nutella brownies!) and vegan brownies too for a virtuous treat packed with plant-based ingredients. Happy baking!
Triple Chocolate Mudslide Brownies
Using melted chocolate, pure cocoa powder and chocolate chips are all smart moves that add up to seriously chocolatey brownies. Thick and chunky, they’re as rich as you could wish for and brandished with a craveably-crinkled crust too!
Cheesecake Swirl Brownies
Eli The Baker‘s Pinterest-friendly brownies have all the creamy flavours of a cheesecake swirled in a picture-perfect layer atop a gooey chocolate base. The result is nothing short of awe-inspiring.

Vegan Dark Chocolate Salted Brownies
These are not just eggless brownies. These are vegan too. Made entirely from pantry staples, the great thing about this recipe from Copper + Cloves is that it features all plant-based ingredients, with no processed flour or sugars. They are also gluten-free and vegan, presenting the opportunity to learn healthy baking skills such as making flour out of oats and almonds; and making an “egg” out of flaxseeds (one of the best substitutes for eggless baking!).
Salted Caramel Brownies
Pick your favourite brownie recipe. It could be any of the recipes shared above or any of your other go-to recipes. Now up the ante by swirling in glossy ribbons of salted caramel before baking… et voilà. Twenty minutes later, you have salted caramel glazed brownies!
Here’s what you have to do exactly:
- Make your favourite brownie batter. Pour it into your prepared baking tin.
- Dollop 3 – 4 heaping tbsp of salted caramel on top of the batter (I recommend Sprig’s Classic Salted Caramel Sauce as it has the perfect consistency: thick and sticky, yet luxuriating in a buttery creaminess!).
- Use a butter knife to make huge swirls, leaving a beautiful trail of the salted caramel across the top of the brownie batter.
- Pop the batter into the oven to bake for the recommended time (according to your recipe). Let the brownies cool down completely before slicing.
Coffee & Vanilla Brown Butter Blondies
Think of these blondies as blonde brownies. There’s not a fleck of cocoa powder in the batter; but what they lack in chocolatey-ness, they more than make up for with deep accents of vanilla, as a perfect accompaniment to a pot of coffee and a book on a lazy Sunday afternoon.

This decadent loaf combines the best of both worlds with a gooey brownie-like chocolate cake layered on top of a buttery chocolate-chip cookie base. Hello Brookie Loaf Cake!
