Recipe: Dalgona Coffee

If you’ve spent any time scrolling down Instagram or on Tik Tok recently, there’s no way you’ve missed the sensational sight of #DalgonaCoffee – the frothy, three-ingredient iced-coffee that’s all anybody can sip on right now!

Inspired by the South Korean dalgona candy (a toffee sponge), this viral wonder is set apart by its distinctive dollop of whipped coffee foam sitting prettily atop a glass of cold milk. Of course in India, we’ve always been partial to such frothy, generously well-sweetened coffee (also known as “pheti hui” coffee)! Equal parts instant coffee, sugar and hot water – here’s an effortlessly easy recipe from Foodhall India for whipping it up at home.


What you need:

  • 2 Tbsp instant coffee
  • 2 Tbsp granulated sugar
  • 2 Tbsp hot water
  • 200 ml Milk
  • Ice cubes, as needed

Method:

Combine the coffee, sugar and a little hot water in a mixing bowl; and whisk using an electric beater or hand whisk. Keep going until the mixture is frothy and light. Fill a glass with ice, top it with milk, heap on the coffee foam (ideally 2 tbsp)… et voilà!

Vegans could always substitute milk with non-dairy alternatives (oat or almond mylk would be my top picks!); while non-coffee drinkers can also join in the party by swapping the instant coffee with matcha or cocoa powder.
