It’s quick, it’s simple and packed with flavour, not to mention it’s good use of that bowl of leftover rice in your fridge! The best part is that it comes together in less than ten minutes, making it perfect for a weeknight dinner at the end of a long day, or even a lazy weekend meal!
Steps For Making This Spicy Egg Fried Rice
Simple, flavorful, and ready in minutes—this spicy egg fried rice is an elevated take on a classic, balancing a softly-scrambled creamy texture with fiery shades of heat!
- Start by cracking a few eggs into a bowl, adding a pinch of salt, and whisking them until frothy. The key to fluffy, tender eggs lies in this step, so don’t rush it.
- Next, heat a splash of chilli oil in a pan and stir in minced garlic. I’ve used my homemade chilli oil.


- Once the garlic is fragrant, pour in the whisked eggs on low heat. After a few seconds, give them a light scramble—a soft and creamy texture is the goal here, so be careful not to overcook them.

- Once the eggs are just set, it’s time to bring the fried rice to life. Stir in a handful of scallions, followed by your leftover rice. A mix of soy sauces and a little vinegar adds a rich and savory depth, while an extra splash of chilli oil imparts a fiercer edge.

- For extra flavor, garnish with more scallions and chopped red chillies or chilli oil.


Spicy Egg Fried Rice
Ingredients
- 2-3 eggs
- 1-2 tbsp chilli oil
- 3-4 garlic cloves (minced)
- 1-2 cups leftover rice
- 1-1½ tbsp soy sauce (I used dark soy sauce, you can use light soy sauce or a mix of both)
- ½ tbsp vinegar
- ½ cup scallions
Instructions
- Crack your eggs in a bowl and add a pinch of salt. Whisk well until frothy.
- Heat a splash of chilli oil and stir in the minced garlic.

- Once fragrant, add the whisked eggs on low heat. Let it sit for 30-40 seconds, then gently scramble the eggs, being careful not to overcook them.

- Once softly set, stir in scallions, leftover rice, soy sauce and vinegar.

- Serve hot with more scallions for garnish along with chopped red chillies/ chilli oil on top. AND DIVE IN!
