- 2-3 eggs
- 1-2 tbsp chilli oil
- 3-4 garlic cloves (minced)
- 1-2 cups leftover rice
- 1-1½ tbsp soy sauce (I used dark soy sauce, you can use light soy sauce or a mix of both)
- ½ tbsp vinegar
- ½ cup scallions
Crack your eggs in a bowl and add a pinch of salt. Whisk well until frothy.
Heat a splash of chilli oil and stir in the minced garlic.
Once fragrant, add the whisked eggs on low heat. Let it sit for 30-40 seconds, then gently scramble the eggs, being careful not to overcook them.
Once softly set, stir in scallions, leftover rice, soy sauce and vinegar.
Serve hot with more scallions for garnish along with chopped red chillies/ chilli oil on top. AND DIVE IN!
