If you’re looking for a quick and flavorful one-pan dinner that comes together in just 15 minutes, you need to try this Butter Garlic Mushroom Fried Rice.
It stars umami-rich mushrooms, cooked to a garlicky golden-brown perfection with a handful of pantry staples. The result is a simple but soul-satisfying dish that can be enjoyed on its own or served with a fried egg on top for a complete meal!
Steps For Making This Garlic Mushroom Fried Rice
- Start by melting butter in a pan and adding sliced mushrooms, cooking them until they’re golden brown and have released their water.
- Once the mushrooms are almost done, add a little more butter along with sliced garlic for that irresistible aroma. As the garlic turns fragrant, toss in some spring onions and diced chillies or chilli flakes optionally, if you like a little heat.
- The heart of this dish is, of course, the rice. Use leftover rice, as it is dryer than fresh rice and more suitable for fried rice recipes. Toss it in with a combination of dark soy sauce, light soy sauce, and a drizzle of sesame oil.
The result is a deeply savory, umami-rich dish that’s both comforting and satisfying.

For an extra kick, serve it with chilli oil or hot sauce on the side and/ or top it off with a fried egg. This dish is simple, quick, and guaranteed to become a weeknight favorite.


Butter Garlic Mushroom Fried Rice
Ingredients
- 1-2 tbsp butter (& more as required)
- 1½ cups mushrooms (sliced)
- 5-6 cloves garlic (sliced)
- 3-4 tbsp spring onions (diced)
- 1-2 green or red chillies (chopped)
- 1 cup rice
- 1 tbsp dark soy sauce
- ½ tbsp light soy sauce
- 1 tsp sesame oil
- chilli oil (optional)
- 1 egg (optional)
Instructions
- Melt some butter and add your sliced mushrooms, cooking until the mushrooms have released most of their water.
- Once the mushrooms are almost completely cooked to a golden brown perfection, stir in the garlic along with ½-1 tbsp more butter.
- Now stir in a handful of freshly diced spring onions & chillies. You can even season with chilli flakes at this point.

- Toss in your rice along with the dark and light soy sauce and sesame oil. Mix it together until well combined.

- Serve hot with chilli oil/ hot sauce (I like to slide a fried egg on top too)… and DIVE IN!
