Butter Garlic Mushroom Fried Rice
This quick and delicious one-pan dinner comes together with umami-rich mushrooms and a handful of pantry staples which impart deeply-savoury flavours. Serve it as is or with a fried egg on top for a complete meal.

- 1-2 tbsp butter (& more as required)
- 1½ cups mushrooms (sliced)
- 5-6 cloves garlic (sliced)
- 3-4 tbsp spring onions (diced)
- 1-2 green or red chillies (chopped)
- 1 cup rice
- 1 tbsp dark soy sauce
- ½ tbsp light soy sauce
- 1 tsp sesame oil
- chilli oil (optional)
- 1 egg (optional)
Melt some butter and add your sliced mushrooms, cooking until the mushrooms have released most of their water.
Once the mushrooms are almost completely cooked to a golden brown perfection, stir in the garlic along with ½-1 tbsp more butter.
Now stir in a handful of freshly diced spring onions & chillies. You can even season with chilli flakes at this point.
Toss in your rice along with the dark and light soy sauce and sesame oil. Mix it together until well combined.
Serve hot with chilli oil/ hot sauce (I like to slide a fried egg on top too)… and DIVE IN!
