If you know, you know that this foodie’s community is fiendish about noodles, especially when the recipe involves the words chilli, garlic and ramen! Well these spicy chilli garlic noodles are here to up the ante with an elevated twist on my viral recipe.
As with all my hot oil recipes, this one starts with a chilli oil base supplemented by your usual Asian pantry staples. However, we’re also going to be stirring in a few not-so-usual suspects such as diced red peppers and fresh herbs for vibrancy, balanced by a kick of vegan oyster sauce for that umami-rich depth of flavour.
All the key ingredients are added to a large heat-proof bowl, in which we pour in hot oil. The sizzling oil brings out the aromatic flavors of the garlic and herbs, while the heat intensifies the spices, creating a deeply savoury and intensely-rich sauce. All that’s left to do is toss in your cooked noodles, until every strand is coated in the rich, spicy, and slightly tangy sauce… and DIVE IN!
How To Make These Spicy Chilli Garlic Noodles

These noodles are quick (coming together in ten minutes or less) and are packed with vibrant yet umami-rich flavors. They’re perfect for when you need something comforting yet thrilling too!
Key Ingredients:
- Your favourite noodles or instant ramen
- Garlic
- Spring onions/ scallions
- Freshly chopped herbs (basil and coriander work well)
- Diced red peppers
- Sesame seeds
- Gochugaru (crushed red pepper flakes) / chilli flakes
- Neutral-flavoured oil
- Dark soy sauce
- Lime/ lemon
- Oyster sauce

Tips & tricks for elevating this simple ten-minute noodle bowl:
- You will need a large, heat-proof bowl in which to stir together the key ingredients for this recipe.

- Use a neutral-flavoured oil, that is an oil which does not have an overwhelming flavour or lingering smell. Avoid oils such as coconut oil or olive oil as they would definitely overpower the base flavours of the recipe. Instead look to oils such as vegetable oil, sunflower oil, rice bran oil, rapeseed oil or even refined avocado oil!

- For a fresh crunch, garnish with more spring onions, crisp cucumber slices, and a sprinkle of sesame seeds


Spicy Chilli Garlic Noodles
Ingredients
- 1 packet noodles or instant ramen
- 4-6 cloves of garlic (minced)
- 2-3 tbsp spring onions (chopped) (+ more as required for garnish)
- 4-5 tbsp fresh herbs (basil and/ or coriander) (chopped)
- ¼ cup red peppers (chopped)
- 1 tbsp sesame seeds (+ more as required for garnish)
- 1 tbsp gochugaru/ red chilli flakes
- 1 tbsp dark soy sauce
- ½ tbsp lime juice
- 1 tbsp oyster sauce
- 2-3 tbsp neutral-flavoured oil
Instructions
- Cook noodles until just shy of al dente (firm to the bite). Drain and set aside.
- To a large heat-proof bowl: add garlic, spring onions, basil, coriander, red peppers, sesame seeds, gochugaru, soy sauce, lime juice, oyster sauce

- Heat your oil till sizzling (a chopstick inserted in will bubble around the edges); and pour it over the chilli herb mixture

- Give it a good stir, then toss in the cooked noodles.

- Garnish with more spring onions, sliced cucumbers and sesame seeds and DIVE IN!
