Spicy Chilli Garlic Noodles
These spicy garlicky chilli oil noodles come together in just one bowl with a burst of deeply-savoury umami-rich flavours. They're perfect for when you need something quick (in under ten minutes!) and comforting yet thrilling too.

Ingredients

packet noodles or instant ramen
4-6
cloves of garlic
(minced)
2-3
tbsp
spring onions (chopped)
(+ more as required for garnish)
4-5
tbsp
fresh herbs (basil and/ or coriander)
(chopped)
¼
cup
red peppers
(chopped)

tbsp
sesame seeds
(+ more as required for garnish)

gochugaru/ red chilli flakes

tbsp
dark soy sauce
½
tbsp
lime juice

tbsp
oyster sauce
2-3
tbsp
neutral-flavoured oil
Instructions
Cook noodles until just shy of al dente (firm to the bite). Drain and set aside.
To a large heat-proof bowl: add garlic, spring onions, basil, coriander, red peppers, sesame seeds, gochugaru, soy sauce, lime juice, oyster sauce
Heat your oil till sizzling (a chopstick inserted in will bubble around the edges); and pour it over the chilli herb mixture
Give it a good stir, then toss in the cooked noodles.
Garnish with more spring onions, sliced cucumbers and sesame seeds and DIVE IN!
