Spicy Chilli Garlic Noodles

These spicy garlicky chilli oil noodles come together in just one bowl with a burst of deeply-savoury umami-rich flavours. They're perfect for when you need something quick (in under ten minutes!) and comforting yet thrilling too.

Ingredients
  

  • 1 packet noodles or instant ramen
  • 4-6 cloves of garlic (minced)
  • 2-3 tbsp spring onions (chopped) (+ more as required for garnish)
  • 4-5 tbsp fresh herbs (basil and/ or coriander) (chopped)
  • ¼ cup red peppers (chopped)
  • 1 tbsp sesame seeds (+ more as required for garnish)
  • 1 tbsp gochugaru/ red chilli flakes
  • 1 tbsp dark soy sauce
  • ½ tbsp lime juice
  • 1 tbsp oyster sauce
  • 2-3 tbsp neutral-flavoured oil 

Instructions
 

  • Cook noodles until just shy of al dente (firm to the bite). Drain and set aside.
  • To a large heat-proof bowl: add garlic, spring onions, basil, coriander, red peppers, sesame seeds, gochugaru, soy sauce, lime juice, oyster sauce

  • Heat your oil till sizzling (a chopstick inserted in will bubble around the edges); and pour it over the chilli herb mixture

  • Give it a good stir, then toss in the cooked noodles.

  • Garnish with more spring onions, sliced cucumbers and sesame seeds and DIVE IN!
