If you love garlic bread – you need to try this roasted garlic bread dip.
That’s right: we’ve created a creamy dreamy garlicky dip that’s perfect for piling on sourdough or even crackers. That’s not all, we’re roasting our garlic with shallots to impart a caramelised richness to the flavours of this dish.
Serve it at your next games night or even as part of an array of appetisers for your next dinner party this festive season!
Steps For Making This Garlic Bread Dip
- Start by roasting a whole head of garlic and shallots in the oven. Doing so, caramelised the garlic and intensifies its rich flavours with a subtle sweetness that’s perfect for stirring into our dip.



- Mix together the base of the dip; for this you will need
- Sour cream
- Greek yogurt/ hung curd (you can substitute this with more sour cream if you wish)
- Softened cream cheese (you can substitute this with mayonnaise)
- Squeeze out the caramelised garlic cloves and shallots and mash them into the dip until well combined
- Stir in all your favourite add-in’s; a few good options include:
- Spring onions/ scallions
- Diced jalapeños
- Shredded mozzarella and/ or parmesan

- Refrigerate until the dip thickens. Serve with crusty bread and/ or crackers and DIVE IN!

Roasted Garlic Bread Dip
Ingredients
- 1 head of garlic
- 2-3 shallots
- olive oil (as required)
- salt
- black pepper
- ½ cup sour cream
- ½ cup Greek yogurt
- 3-4 tbsp softened cream cheese (can swap with mayo)
- handful of scallions/ parsley
- ½ cup shredded parmesan/ mozarella (or combination of the two)
- ¼ cup diced jalapeños
Instructions
Roast your garlic
- Preheat the oven to 180C.
- Add a head of garlic and the shallots to a heatproof baking dish/ alternatively add them to a baking tray (and wrap with aluminium foil after the step the below).

- Drizzle generously with olive oil, salt and pepper.

- Bake in the oven until golden and caramelised (about 30 minutes).
Prepare the dip
- Meanwhile: in a bowl, mixed together sour cream, Greek yogurt & softened cream cheese.

- Squeeze out the caramelised garlic cloves and shallots, mashing them in to break them down into the creamy mixture.

- Season with salt & pepper, then stir in chopped scallions/ parsley; shredded cheese; jalapeños; and/ or all your favourite add-in's.

- Give it a super-good mix; refrigerate for a couple of hours until the dip thickens, then DIVE IN!
