Recipe: Whipped Nut Butter French Toast

If there’s one silver lining to this lockdown, it’s that everyday could quite possibly be justified as a brunch-day.

Natural Chef and Founder of Maple & Co, Adria Wu, shares her easy-breezy spin on a classic French toast, perfect for brightening our mornings with craveable clouds of whipped nut butter, a topping as delicious as it is easy to make – so much so in fact, that you might find yourself heaping it on anything and everything else too!


Toppings:

  • 3 tbsp nut butter (almond, peanut – any works)
  • 1.5 tbsp hot boiled water
  • handful berries (fresh or frozen)
  • 1 ripe banana, sliced

Mix butter and water evenly with a spoon or fork until fluffy. Set aside.

Ingredients for French Toast:

  • 4 slices of bread
  • 2 eggs, beaten
  • 1/2 tsp vanilla (bean paste is my fav)
  • 2 pinches of sea salt
  • 2 tsp butter

Method:

Mix the eggs, vanilla and salt. Then coat the bread with egg mix using a spoon to spread if needed. Heat pan to medium heat, melt butter and cook each side of bread until crispy. Serve with sliced banana, whipped nut butter and berries on top!
