How To Make Butter Garlic Fried Rice
- Start with the butter. Melt a generous knob of butter in a pan/ work.
- Build the flavour: Once melted, add all your aromas, herbs and spices. Think garlic, spring onions (both white and green parts), ginger, chilli oil and chilli flakes.

- Add the rice: Once your chilli-garlic mixture is fragrant, toss in your rice. Day-old, cold rice is your best friend here: it fries up separate and toasty instead of turning into a sticky mess. As for the variety – short grain or jasmine rice works best.

For the Fried Rice
- 1.5-2 tbsp butter
- 6-7 cloves garlic chopped
- ½-1 cup spring onions, (diced, white & green parts)
- 1 knob ginger, grated
- 1-2 tbsp chilli oil or hot sauce
- 1-2 tbsp chilli flakes
- 1 cup leftover rice
- 1 tbsp soy sauce
- handful fresh herbs, finely chopped
Instructions
- Heat 1.5–2 tbsp butter in a pan.
- Once melted, add the chopped garlic, diced spring onions, grated ginger, chilli oil or hot sauce and chilli flakes. Cook for a few minutes, stirring regularly.

- Once fragrant, add the leftover rice, soy sauce and finely chopped fresh herbs.
- Mix everything well until the rice is evenly coated and heated through. Serve and DIVE IN!
