Cosy, nutritious and delicious — this one-pan tofu mushroom broccoli stir-fry is the ultimate weeknight dinner hero. Packing the perfect balance of greens, veggies and protein, it comes together with a spicy, savoury and sticky sauce that’s best paired with a steam-billowing bowl of rice.

The beauty of this recipe (as with all the recipes you’ll find here!), is that it comes together in twenty minutes and is endlessly adaptable to whatever you have in the fridge. So feel free to swap in veggies of choice and adjust the flavours to your liking! Honestly, it’s the kind of recipe you’ll be making on regular rotation.

How To Make This Tofu Mushroom Broccoli Stir Fry

  • Prep the tofu. Wrap tofu between kitchen towels and press gently to release excess water. Slice into bite-sized pieces and, if you like a crispier texture, lightly coat with corn flour.
  • Make the sauce. Whisk together a few pantry staples to stir together our deeply-savoury sauce. You will need:
    • Soy Sauce (you can use a mix of light and dark soy sauce)
    • Rice vinegar (you can swap in regular white vinegar)
    • Hot sauce of choice
    • Sugar (to yasye)
    • Corn flour slurry (whisked together with corn flour and water).

  • Cook the tofu. Heat sesame oil in a non-stick pan. Add tofu and cook on low heat until golden on both sides. Remove and set aside.
  • Toast the nuts. In the same pan, toast cashews or peanuts for a minute and remove.
  • Cook the veggies. Add a splash more oil if needed and toss in the mushrooms. Once they begin to soften, add broccoli and sliced onions. Stir-fry for a few minutes, then add more veggies of choice — red peppers, carrots, or green beans work beautifully here.

  • Build your flavours. Add minced garlic, chilli flakes, and grated ginger. Stir well until the veggies are lightly charred but still crisp. Then pour in the sauce and let it simmer until thickened and glossy. Toss everything together — tofu, veggies, nuts — until evenly coated.
  • To serve. Garnish with fresh basil and scallions. Serve hot over rice or noodles… and DIVE IN!

Tofu Mushroom Broccoli Stir-Fry

Cosy, nutritious, and delicious — this one-pan stir-fry will quickly become a weeknight favourite. Crispy tofu, vibrant veggies and fresh basil come together with glossy spicy sticky sauce, best served with a bowl of rice!

Ingredients
  

  • 1 block tofu pressed and sliced into bite-sized pieces
  • Corn flour optional, for coating
  • Splash of sesame oil for frying

For the sauce

  • 1.5 tbsp light soy sauce
  • 1 tbsp dark soy sauce (can swap with light soy sauce)
  • 1.5 tbsp rice vinegar (can swap with white vinegar)
  • 2 tbsp hot sauce of choice
  • 2-3 tsp sugar
  • 3 tbsp water + 1/2 tbsp corn flour (whisked into a corn flour slurry)

For the stir-fry

  • 1 cup mushrooms sliced
  • 1/2 onion sliced lengthwise
  • 1 cup broccoli florets blanched for 30 seconds beforehand, optional
  • 1 cup veggies of choice, sliced (e.g. red pepper, carrots, green beans)
  • 3-4 cloves garlic minced
  • knob of ginger grated
  • 2-3 tsp chilli flakes
  • handful of cashews or peanuts
  • handful of fresh basil
  • scallions (for garnish)
  • sesame seeds (for garnish)

Instructions
 

  • Whisk together the stir fry sauce with soy sauce, vinegar, hot sauce, sugar and corn flour slurry. Set aside.

  • Stir-fry for a few minutes, then add any additional veggies (red peppers, carrots, or green beans).

  • Add garlic (minced), ginger (grated), and chilli flakes. Sauté until fragrant and lightly charred, while keeping the veggies crisp.
  • Pour in the prepared sauce and let it sizzle until thickened and glossy.

  • Toss everything together — tofu, veggies, and toasted nuts — until evenly coated. Finish by stirring in handfuls of fresh basil, scallions and sesame seeds
