If you love an action-packed salad, you’re in the right place. This high-protein bean salad is the ultimate proof that “healthy” and “delicious” are in fact two sides of the same coin!

My take on this nutrient rich compilation of colours and flavours stars kidney beans (‘”rajma” as they are more commonly known here in India) but the truth is, you can just as easily swap in your favourite beans (or even a mix of them!). As always, feel free to adapt the base recipe to your liking with your own choice of add-in’s. As for the dressing, it’s craveably-creamy yet startlingly-light and equal parts spicy, smoky, creamy and zesty! Honestly, it could seriously make anything taste delicious. 


Ingredients In This Creamy High-Protein Bean Salad

For the dressing, you will need:

  • Greek yogurt, which brings a healthy creamy base to the base
  • Mayonnaise (optional), just a dollop adds that extra layer of richness
  • Lime/ lemon, for a zesty zing
  • Hot sauce of choice, for that fiery touch
  • Your favourite seasonings (paprika, salt pepper)

Once you’ve whisked together the dressing, do taste and adjust according to preference , eg adding more lime juice for zing, more paprika for smokiness etc.

To assemble the high-protein bean salad, you will need:

  • Cooked kidney beans (or any beans of choice)
  • Cherry tomatoes
  • Jalapeños
  • Pickled onions (optional, we’ve detailed the recipe below!)
  • Fresh herbs (such as coriander and parsley)
  • Feta for a creamy crumble addition.

Pour the creamy, spicy dressing on top, give everything a good toss to ensure that each element of the salad is evenly mixed, coming together with a beautiful burst of colourful flavours and textures to dive into!

Creamy High Protein Bean Salad

If you're looking for a quick, delicious, and protein-packed meal, this creamy high-protein bean salad is your new go-to! It’s loaded with beans, crunchy veggies, and a tangy, creamy dressing that’s perfect for a nutritious lunch or side dish. Dive in for a bowl of goodness!

Ingredients
  

  • 4 tbsp greek yogurt
  • 1 tbsp mayo (optional)
  • 1 tbsp lime juice
  • 3-4 tsp paprika
  • 2-3 tsp hot sauce of choice
  • salt and pepper to taste
  • 1 cup cooked kidney beans (or any beans of choice)
  • ½ cup cherry tomatoes
  • 2-3 tbsp jalapenos (diced)
  • ¼ cup pickled onions (see below for the recipe)
  • ½ cup fresh herbs, chopped (e.g. coriander, parsley)
  • ½ cup crumbled feta

Instructions
 

  • For the creamy dressing mix together greek yogurt, mayo, lime juice, paprika, hot sauce, salt and pepper as per your preference
  • Assemble the salad with kidney beans, cherry tomatoes, jalapeños, freshly chopped herbs, pickled onions and crumbled feta

  • Pour in your dressing, give it a good toss and DIVE IN!

Notes

For the pickled onions, mix together:
  • 1 large finely sliced
  • Juice of 1 lime
  • 1-1.5 tbsp vinegar
  • 2-3 tsp honey
  • Pinch of salt
Give it a very good mix to combine and let it sit for at least 30 minutes before using. This non-recipe recipe makes a small jar of pickled onions that you can use for all your sandwiches and wraps!
