Creamy High Protein Bean Salad

- 4 tbsp greek yogurt
- 1 tbsp mayo (optional)
- 1 tbsp lime juice
- 3-4 tsp paprika
- 2-3 tsp hot sauce of choice
- salt and pepper to taste
- 1 cup cooked kidney beans (or any beans of choice)
- ½ cup cherry tomatoes
- 2-3 tbsp jalapenos (diced)
- ¼ cup pickled onions (see below for the recipe)
- ½ cup fresh herbs, chopped (e.g. coriander, parsley)
- ½ cup crumbled feta
For the creamy dressing mix together greek yogurt, mayo, lime juice, paprika, hot sauce, salt and pepper as per your preference
Assemble the salad with kidney beans, cherry tomatoes, jalapeños, freshly chopped herbs, pickled onions and crumbled feta
Pour in your dressing, give it a good toss and DIVE IN!
For the pickled onions, mix together:
- 1 large finely sliced
- Juice of 1 lime
- 1-1.5 tbsp vinegar
- 2-3 tsp honey
- Pinch of salt
Give it a very good mix to combine and let it sit for at least 30 minutes before using. This non-recipe recipe makes a small jar of pickled onions that you can use for all your sandwiches and wraps!
