My crispy rice omelette recently went viral on Instagram and with good reason. After all, is there anything more comforting than the combination of chilli oil, eggs, cheese and rice?
Of course: if you know, you know that this recipe draws inspiration from Kerak Telor, a spicy rice-based pancake-like omelette that’s typical of Betawi cuisine in Indonesia. This local dish literally translates to “egg crust” and is a popular street food in Jakarta.
My rendition gives it a bit of a twist with the addition of chilli oil and cheese. The result is an explosion combination of fiery yet creamy flavours, speckled with a craveable crunch. Try this quick and simple five minute dish for a soul-stirring breakfast, but it’s honestly just as good for dinner too!
Ingredients In This Crispy Rice Omelette

You need just five minutes and four ingredients to make this crispy rice omelette:
- Chilli oil: you can use any storebought chilli oil, or make it easily at home with my go-to recipe, shared below!

- Leftover rice: leftover rice is preferred over fresh rice here, as it is dryer and more suitable for cooking to a crispy crunchy perfection.
- 2-3 eggs
- Grated cheese of choice: any melty cheese should do, such as mozzarella or cheddar

As with all my recipes, you can adapt this crispy rice omelette to your personal taste by swapping in other ingredients too! Some of our favourite add-in’s (which are completely optional!) include:
- Scallions
- Hot sauce

5 Minute Crispy Rice Omelette
Ingredients
- 1-2 tbsp chilli oil
- ½ cup cooked rice
- 2-3 eggs
- salt & pepper (to taste)
- ½ cup cheese of your choice (grated)
- 1-2 tbsp scallions (optional)
Instructions
- Crack 2-3 eggs in a bowl. Stir in a pinch of salt & pepper; and whisk well until frothy.
- Heat a splash of chilli oil. Add in your cooked rice and mix well until combined.
- Spread the rice in an even layer, gently pressing down. Let it cook for a few minutes so that the bottom starts to develop a crisp crust.

- Pour in the whisked eggs. Garnish with scallions and your favourite cheese. Cover and let the eggs cook through.

- Fold, serve with your favourite hot sauce (highly recommended!) and DIVE IN!
