Sometimes, the only thing better than a grilled cheese is a spicy grilled cheese.
This one’s as decadent as it gets, balancing those cheesy creamy flavours with a fiery twist that will have you craving more. You can enjoy it as is or pair it with your favourite soup for the ultimate cosy combination!
Not only is this spicy grilled cheese super simple to stir together, it’s also endlessly adaptable to whichever ingredients you have at home. You can use any cheese of choice, swap in your favourite hot sauce and adjust the spices to your tolerance. So let’s dive in!
Steps To Make This Spicy Grilled Cheese

- Stir together our spicy cheesy base with your favourite hot sauce and/ or chilli oil, with a spoonful of mayonnaise to balance the heat with a creamy touch. We will also add heaps of grated cheese (parmesan, mozzarella or any melty cheese of your choice) and season with all our favourite spices with a sprinkle of chopped scallions for that vibrant touch.

- Assemble: spread the spicy cheesy mix over a thick slice of bread (we love sourdough!). Layer with more grated cheese on top and cover with another slice of bread.
- Cook your spicy grilled cheese: melt a generous knob of butter and add your toastie to the pan, flipping halfway. Cook until both sides are crisp and golden on the outside but the cheese inside has melted to perfection. Serve hot and DIVE IN!

Spicy Grilled Cheese
Ingredients
- 2 slices bread (you can use any bread of choice; we have used sourdough)
- 1 tbsp butter
- 1-1½ tbsp mayo
- 1 tbsp hot sauce of choice
- 1 tbsp chilli oil
- ⅓ cup cheese, grated (parmesan/ mozzarella or any melty cheese of choice)
- 1-2 tsp paprika
- 1-2 tbsp scallions (chopped)
- salt + pepper to taste
Instructions
- In a large bowl, mix together the mayo, hot sauce, chilli oil, cheese, paprika, scallions, and the seasonings. Taste and adjust.

- Slather this creamy dreamy mix evenly over a slice of bread

- Melt butter in a pan. Add your prepped slice of bread. Top with more grated cheese if you like (choose the meltiest cheese you can find!)

- Cover with another slice of bread, pressing down gently. Once the bottom has browned, flip the toastie to ensure it cooks through evenly on both sides.

- Serve hot and dive in!
