If you like me, dream about Turkish eggs but you’re daunted by the prospect of perfectly poaching your eggs, then you need to try my twist on a classic with these Turkish fried eggs!
Also known as cilbir, Turkish eggs are softly-poached eggs served over garlicky dill-infused Greek yogurt with a spicy smoky chilli butter.
These Turkish fried eggs strike the same balance between fiery and creamy flavours, but bring in salty feta and sesame seeds too for added punch and crunch. The best part is that this dish comes together in about five minutes, making it perfect for a quick breakfast or even brunch when paired with crusty sourdough.
How To Make These Turkish Fried Eggs

- Melt a generous knob of butter in a pan and stir in your favourite spices —chilli flakes, crushed red pepper, and a bit of smoky paprika for that extra kick. As always, feel free to measure with your soul!

- Once the butter is infused with all that spicy smoky goodness, it’s time to crack in the eggs.

- Let the eggs cook through, soaking up all that fiery chili butter.
- As they’re cooking, sprinkle over sesame seeds for some nutty crunch; and top with a big crumble of salty feta.

- For an added burst of freshness, garnish with chopped coriander or parsley, bringing everything together.
Serve your eggs over a bed of herby, garlicky yogurt—whisked to perfection with fresh herbs and minced garlic. The cool, tangy yogurt balances the heat of the chili butter, while the feta adds a salty, creamy finish.

Pair with crusty toasted bread and enjoy this comforting, flavor-packed dish!


Turkish Fried Eggs
Ingredients
- 2-3 tbsp butter
- 1-2 tbsp spices, like chilli flakes, crushed paprika, red pepper flakes
- 2 eggs
- ¼-⅓ cup crumbled feta
- sesame seeds (for garnish)
- ¼-⅓ cup freshly chopped parsley
- ½ cup yogurt
- 1-2 garlic cloves (minced)
Instructions
- Start by melting your butter.
- Stir in your favourite spices, I’ve added chilli flakes, crushed red pepper flakes and paprika. As always, measure everything with your SOUL!

- Give it a good mix. Once the chilli butter is sizzling, crack in 2 eggs.

- Let them cook through, garnish with more sesame seeds, a handful of freshly chopped coriander/ parsley and a big crumble of feta

- To make the garlicky yogurt, whisk together the Greek yogurt with remaining parsley and minced garlic until well combined.

- Serve the eggs over the herby garlicky yogurt and DIVE IN!
