Recipe: Buttermilk Pancakes!

It’s that most wonderful time of the week again… brunch.

But what’s a foodie to do on that odd (/maybe regular) occasion when you want your weekend pancake fix and well, you also want to lounge around in your jim jams and and catch up on your soaps all day.

You scrounge up a simple yet winning recipe from your favourite brunch spot, that’s what.

Yep folks, the Kitchen Inspiration series on the blog is back and I’m delighted to share that it features none other than classic buttermilk pancakes from  Christopher’s Covent Garden – the stylish and very handsome American restaurant & martini bar, radiating a timeless glamour.

As the saying goes after all, if the foodie won’t go to Christopher’s, then…


Buttermilk Pancakes

(makes 30 pancakes)

Ingredients:

  • 500g plain flour
  • 6 tbs baking powder
  • 5 tbs sugar
  • 4 eggs, lightly beaten 1500ml buttermilk
  • 150g unsalted butter melted Clarified butter for cooking

Method:

  1. Mix flour, sugar and baking powder in a bowl.
  2. Add the eggs and the buttermilk, mix together, then add melted butter.
  3. Whisk. Leave it to rest (if you have time) to become aerated.

Heat a large non-stick frying pan on moderate heat. Add a touch of clarified butter into the pan. Add a small ladle of batter to the pan. Cook for about 3 min, until bubbles appear on the surface. Then turn pancake over and cook for a further 3min.
Transfer the pancake to a plate and keep warm, while making the rest of the pancakes.

To serve:

  • Slice or two of the best quality sweet cured bacon.
  • Knob of dived butter.
  • Maple syrup.

Note!

To make blueberry pancakes, you will need two punnets of blueberries. And just before flipping the pancakes add about 4 or 5 blueberries to the pancake. Then flip over and follow the same process.

Can be also served with blueberry coulis or compote.


If you feel like heading out for brunch instead, then I can’t recommend the weekend offerings at Christopher’s enough. Expect to find American classics served up  in all their decadent glory, whilst neatly balanced by a deliciously healthy Superfood Menu. There’s even an Early Chocolate Shot (almond milk, raw cacao and peanut butter) for a spot of guilt-free indulgence!
