This week’s Kitchen Inspiration kicks off with a simple but oh-so-delicious recipe from Healthbox London for apricot and coconut granola. And trust me, it’s bound to have you reaching for more.
I don’t know about you guys but faced with the unappealing alternative of an afternoon carb crash, I’m always on the lookout for such gloriously tasty yet healthy snacks for refuelling post workout or between meals.
The fitspiring team over at Healthbox London clearly felt the same predicament. With so many protein snacks and energy bars containing high levels of added sugars, additives and flavourings, the company grew from a desire to produce nutritious snacks made with high quality ingredients, natural foods and lots of love! Their wholesome treats can be enjoyed at home, at work, or on the go, providing a burst of natural, sustained energy.

APRICOT & COCONUT GRANOLA
Inspired by our zesty apricot & coconut energy bites, this granola will kick start your mornings. This recipe was dreamed up late on a Friday afternoon and as a testament to how good this granola is – the jar was empty by Monday! Over the weekend this granola fuelled our breakfasts, hands delved back into the jar during the day and friends left with little Tupperware boxes. Enjoy with the usual milks/yoghurts/fruits or indeed giant fistfuls straight from the jar.
Our apricot & coconut granola is simple to make and even easier to eat. Much more luxurious and nutritious than your regular cereals; a single serving is full of fibre, protein and clever little omega threes. One of the best things about granola (apart from the eating) is how versatile a recipe can be; swap in your preferred oils or sweeteners to create your own version. The addition of brown sugar here is entirely optional and gives a little extra sweetness and crunch.
Ingredients:
- 3 cups jumbo oats
- Pinch sea salt
- Zest of 1 orange
- 1 cup golden linseed/flaxseed
- 2tbsp coconut or sunflower oil
- 2tbsp honey
- 1tbsp soft brown sugar (optional)
- ½ cup coconut chips
- ½ cup dried apricots, chopped
Preheat your oven to 150C and line a large baking tray with greaseproof paper. In a large pan melt together the oil, honey, sugar (if using) with a pinch of salt. Stir in the oats, linseed and orange zest until fully combined. Spread your mixture onto the lined baking tray. Cook for 40 minutes, stirring every 10-15 minutes. When your oats are beautifully golden, sprinkle over the coconut chips and return to the oven for 2 minutes until your coconut is lightly toasted. Remove from the oven and leave to cool. Stir in the chopped apricots and store in an air-tight jar.
