Molten Eggless Brownie Pudding

Rustle up this eggless brownie pudding in less than fifteen minutes (baking time included!) whenever the urge for something sweet strikes. It's the perfect pick-me-up with a gloriously-gooey and molten centre studded with pools of melted chocolate! This single-serving recipe makes one, but you can scale it up to make more.

Ingredients
  

  • 3 tbsp butter
  • 1 tbsp dark brown sugar
  • 1 tbsp caster sugar
  • 2 tsp milk
  • ½ tsp vanilla extract
  • ¼ tsp baking soda
  • ¼ cup all-purpose flour
  • tbsp cocoa powder
  • chocolate chips (measured with your soul)

Instructions
 

  • Melt the butter. Whisk in both sugars, milk and vanilla until evenly combined.
  • Sift in the flour, cocoa powder and baking soda. Gently fold these dry ingredients into the wet mixture, until just incorporated. Don't over-mix.
  • Gently stir in the chocolate-chips.
  • Scrape the brownie batter out into a small ramekin and press some more chocolate chips on top.
  • Bake in a pre-heated oven at 180°C for 8-10 minutes until the edges have puffed but the centre is still soft. Don't over-bake!
  • Let it cool down slightly before digging in, preferably with a scoop of ice cream on top!
