Eggless Cookie Dough Pudding

This eggless cookie dough pudding is a quick and cosy treat - meltingly-soft and gooey with puddles of melted chocolate running through!

Ingredients
  

  • ½ cup + 1 tbsp butter (127.57 gm)
  • 6 tbsp sugar (I used 3 tbsp caster sugar + 3 tbsp brown sugar)
  • 2 tbsp milk
  • ¾ tsp baking soda
  • 1 cup all purpose flour
  • ½ cup chocolate chips

Instructions
 

  • Melt the butter. Once it has has cooled down, whisk in the sugars and then stir in the milk.
  • Sift the flour, baking soda and salt into the same bowl. Gently fold to combine. 
  • Stir in chocolate chips.

  • Tip the cookie dough out into a small balking dish and pop it in a preheated oven at 180C for 8-12 minutes until the edges have puffed, turning golden-brown, but the centre is still soft. It’s important not to over-bake this, if you want the inside to still be gooey!

  • Serve hot with ice cream and DIVE IN!
